Pineapple Margarita
Ingredients
Salt Rim
Coarse salt
Zest of a lime
Margarita
1 part tequila
1-2 parts pineapple juice (I pureed pineapple in a blender but you can also use pineapple juice)
1/2 -1 part triple sec
Lime Juice
Ice
Optional Garnish: lime or pineapple wedges
Directions
Combine salt and lime zest on a plate. Rim the edge of the glass with a lime wedge, then dip the glass in the salt mixture.
In a cocktail shaker, add tequila, pineapple juice, triple sec, lime juice and ice. Shake and pour /strain into the salt rimmed glass. Garnish with optional lime or pineapple.
To make a frozen margarita: Add ingredients to a blender, along with ice and blend together. (Or if you’re not using fresh pineapple, you can use frozen pineapple and omit the ice)
For the Pineapple Salsa:
In a bowl, combine pineapple, red onion, jalapeño, red bell peppers, cilantro, lime juice, salt and pepper and mix together. Serve with chips.
