I had some sage left from my one pan pork chops recipe so decide to make this Butternut Squash Steaks in Sage Brown Butter Sauce. I only used the long neck part of the squash to look like steaks so if you don't care about the shape, use the whole squash. This will become one of your favorite vegetarian meal or side dish!
Butternut Squash Steaks
Ingredients
1 large butternut squash, sliced thin (buy one with a long thick neck)
salt and pepper
1 Tablespoon olive oil
2 Tablespoons butter
1 Tablespoon balsamic vinegar (optional)
4-5 sage leaves
2 garlic cloves, minced
Directions
Butternut squash: Peel the neck, cut into thin slices and sprinkle with salt and pepper on both sides (reserve the base for another recipe or use the entire squash).
Heat oil in a skillet. Cook the squash, turning over every few minutes, until it's cooked and browned. Reduce heat to low and add the butter, optional balsamic vinegar, sage and garlic. Coat the squash with the melted butter using a spoon and continue to cook until butter is browned.
