Chicken Fried Rice - Very easy to make using leftover rice, vegetables and chicken.
I used brown rice, broccoli, frozen peas/carrots and chicken thighs for this recipe.
It's also best to use day old rice as fresh cooked rice is too sticky for stir frying. If you don't have leftover rice, spread rice on a baking sheet or plate and place in the freezer for about 30 -60 minutes to harden before cooking.
Chicken Fried Rice
Ingredients
1-2 Tablespoons olive oil ( or canola or vegetable)
2 chicken thighs ( seasoned with salt and pepper)
Any vegetables such broccoli, cauliflower, carrots, peas, snap peas, mushrooms, etc
2-3 cups of cooked rice
1-2 eggs
1-2 Tablespoons soy sauce ( or more as needed)
1 teaspoon sesame oil ( or more as needed)
salt and pepper
optional garnish: green onions and/or sesame seeds
Directions:
Heat 1 Tablespoons of oil in a pan. Season chicken with salt and pepper and brown on both sides until cooked through. Remove and set aside.
Add vegetables and sauté for a few minutes. Add rice and continue to sauté for a few minutes.
Move ingredients to the side of the pan. Add more oil if needed and add eggs to the pan. Scramble and then stir together with ingredients.
Cut chicken into strips or cubes. Add chicken, soy sauce, sesame oil and some black pepper and sauté together.
Taste and adjust seasonings, as needed.
Place on a serving platter and garnish with optional green onions and/or sesame seeds.
