Easy to make using leftover rice, vegetables and chicken. For this recipe, I used brown rice, broccoli, frozen peas/carrots and chicken thighs.
It's also best to use day-old rice as freshly cooked rice can be too sticky for stir frying. If you don't have leftover rice, spread the rice on a baking sheet or plate and place in the freezer for about 30 -60 minutes to harden before cooking.
Chicken Fried Rice
Ingredients
2-3 Tablespoons olive oil
2 chicken thighs, sliced or cubed
Vegetables such as broccoli, cauliflower, carrots, peas, snap peas, mushrooms, etc
2-3 cups of cooked rice
1-2 eggs
1-2 Tablespoons soy sauce ( or more as needed)
1 teaspoon sesame oil ( or more as needed)
salt and pepper
Optional garnish: green onions and/or sesame seeds
Directions:
Heat 2 Tablespoons of oil in a pan. Season the chicken with salt and pepper and sauté until cooked through, about 5-6 minutes. Remove and set aside.
Add the vegetables and sauté for a few minutes. Add the rice and continue to sauté for a few minutes.
Move the ingredients to the side of the pan. Adding more oil if needed. scramble the eggs then stir together with the ingredients.
Add the cooked chicken, soy sauce, sesame oil and black pepper and stir together. Taste and adjust seasonings as needed. Garnish with green onions and/or sesame seeds before serving.
