Grilled Chicken with Gochujang Marinade



Try this sweet and spicy Korean inspired chicken marinade with Gochujang (Korean chili pepper paste). This was my go to dish for gatherings this summer and everyone loved the bold flavors. You can use an outdoor/indoor grill or cook in a skillet.



Grilled Chicken with Soy Sauce -Gochujang Marinade


Ingredients

3-4 lbs skinless, boneless chicken thighs

1 Tablespoon cooking oil - if using a skillet

Optional garnish: sesame seeds and/or green onions


Marinade

¼ cup soy sauce

3-4 Tablespoons honey or brown sugar

1 Tablespoon sesame oil

2 Tablespoons rice wine vinegar or apple cider vinegar

1-2 Tablespoons gochujang (Korean red pepper paste)

3 garlic cloves, minced

1-2 teaspoons ginger, minced or grated


Directions


In a bowl, mix the marinade ingredients together. Coat the chicken with the marinade and place in the fridge for 1-2 hours or overnight.


Grill or cook the chicken in a pan for 15-20 minutes (depending on size and whether boneless or bone-in) or until the chicken is cooked and has reached an internal temperature of 165ºF.


(If using a skillet, heat 1-2 Tablespoons of oil before cooking)

Garnish with optional sesame seeds and/or green onions before serving.
