Grilled Chicken with Gochujang Marinade



Try this sweet and spicy Korean inspired chicken marinade made with Gochujang (Korean chili pepper paste).


This was my go to dish for gatherings this summer and everyone loved the different and bold flavors!


You can use an outdoor/indoor grill or cook on a frying pan.




Grilled Chicken with Soy Sauce -Gochujang Marinade


Ingredients

3-4 lbs skinless, boneless chicken thighs

1 Tablespoon cooking oil - if using a skillet

Optional garnish: sesame seeds and/or green onions


Marinade

¼ cup soy sauce

3-4 Tablespoons honey or brown sugar

1 Tablespoon sesame oil

2 Tablespoons rice wine vinegar or apple cider vinegar

1-2 Tablespoons gochujang (Korean red pepper paste)

3 garlic cloves, minced

1-2 teaspoons ginger, minced or grated


Directions


In a bowl, mix marinade ingredients together. Coat the chicken with 1/2-3/4 of the marinade and set aside to marinate for 1-2 hours.


Grill / cook chicken for 10-15 minutes (depending on size and whether boneless or bone-in) and until chicken is cooked and has reached an internal temperature of 165ºF.


(If using a skillet, heat 1 Tablespoon of oil before cooking)

Optional - brush with additional sauce.


Garnish with optional sesame seeds and/or green onions before serving.


If serving as wraps, serve with marinade, ssamjang ( see previous post) or your favorite condiment.
