Grilled Watermelon Salad



This refreshing watermelon salad with arugula, feta, red onion, pecans, and mint is perfect for summer and always a crowd favorite!


Grilled Watermelon Salad


Ingredients

Watermelon, sliced into disks, about 1 inch thick

Olive oil for brushing

Arugula or any greens

1/4 red onion, sliced

Crumbled feta, goat or Gorgonzola cheese

Mint or basil for garnish

Optional: Pecans or any nuts


Balsamic Dressing:

1/4 cup extra virgin olive oil

2 Tablespoons balsamic vinegar

1 garlic clove, minced

Pinch Salt and pepper


Directions

Heat an indoor grill pan or outdoor grill. Brush just enough olive oil over the watermelon slices to thinly coat. Grill each side 2-3 minutes or until grill marks appear. Season with a pinch of salt and slice into bite sized pieces.

Dressing: Whisk the ingredients together in a bowl.


Arrange arugula on a serving plate. Top with red onions, watermelon, feta, mint, and optional nuts. Serve the dressing on the side to drizzle when ready to eat.
