Instant Pot Whole Chicken

Using the Instant Pot is one of the best methods to cook whole chicken. This chicken is great to serve as is for dinner or added to quesadillas, sandwiches or salads during the week.
The biggest advantage of cooking a whole chicken in the Instant Pot is there's no guesswork as to when your chicken is done. Cooking time is 6 minutes per pound and it comes out juicy and tender every time!

To cook a whole chicken:
Pat dry the chicken with a paper towel
In a bowl, mix your favorite spices with 1 Tablespoon of oil to form a paste
Carefully rub the paste underneath the skin of the chicken breasts and all over the chicken.
Place some sliced onions and lemon inside the cavity, which helps infuse flavors.
Place a trivet inside the Pot with 1 cup of water or broth. (As I was using the liquid for other dishes, I added about 2 cups)
Cook on manual pressure - 6 minutes per pound ( example: 24 minutes for 4 lb chicken)
Natural release for 15 minutes, then release the remaining pressure
