Instant Pot Whole Chicken

The best way to cook a whole chicken as it’s so easy and comes out moist!  This chicken is perfect to serve as is for dinner, or you can use for meal prep or for other chicken recipes.

The advantages of cooking a whole chicken in the Instant Pot:

No guesswork as to when your chicken is done - Cooking time is 6 minutes per pound and it comes out perfect every time.

The chicken is so juicy and tender - no dried out oven chicken!

To cook a whole chicken:

  • Pat dry chicken with a paper towel

  • In a bowl, mix your favorite spices with 1 Tablespoon of oil to form a paste

  • Carefully rub the paste  underneath the skin on the chicken breasts and all over the chicken.

  • Sear the chicken in sauté mode  (since i was making other dishes with chicken, I omitted this step)

  • Place cut up onion and lemon inside cavity - (aromatics infuse into the chicken as it cooks giving it flavor)

  • Place a trivet inside of the Instant Pot with 1 cup of water or broth. (As I was using the liquid for other dishes, I added about 2 cups)

  • Cook on manual pressure - 6 minutes per pound ( example: 24 minutes for 4 lb chicken)

  • Natural release for 15 minutes and then release remaining pressure
