1/4 onion, diced
2 garlic cloves, minced
1 red chili, jalapeño or half red bell pepper, chopped (optional)
3-4 Tablespoons mayonnaise
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper

Optional garnish: green onions
Directions
In a bowl, add corn, onion, garlic, pepper, mayo, sugar, salt and pepper and mix together.
Melt butter in an oven safe pan. Add the corn mixture and stir for a couple of minutes to absorb the butter. Spread the mixture evenly and top with mozzarella cheese.
