No Yeast Flatbread Pizza

No yeast required and no waiting for the dough to rise makes it a perfect weeknight treat. Make one large dough, divide in half or make mini sizes for the family with different toppings. i made vegetarian and buffalo chicken pizzas.
For buffalo chicken, I used ranch dressing as the sauce and mixed shredded chicken ( made in the Instant Pot) with buffalo wing sauce and melted butter.
Instant Pot Directions
Add chicken breasts or thighs in the instant pot
Add 1 cup chicken broth or water
Cook on manual high pressure for 10 minutes ( it will finish cooking in the oven)
Let naturally release for 5 minutes before releasing remaining pressure
Shred or slice the chicken into pieces
No Yeast Flatbread Pizza
Dough
2 1/2 cups all purpose flour
1 teaspoon salt
1 Tablespoon baking powder
1 teaspoon sugar (optional)
1 cup warm water
2 Tablespoons olive oil
Your favorite sauce, cheese and toppings
Directions
In a large bowl, mix together the flour, salt, baking powder, and optional sugar. Add water and olive oil and stir until combined using a fork or a rubber spatula.
Transfer the dough onto a lightly floured work surface and knead just until it comes together (don’t over knead as this will toughen the dough).
Cover the dough with a plastic wrap or damp towel and let rest for about 15 minutes.
Meanwhile, preheat the oven to 400 degrees F. and prep your toppings.
Using a rolling pin, roll out the dough into your desired shape (optional: divide the dough in half for different toppings)
Place the dough on a baking sheet lined with optional parchment paper. Top with your favorite sauce, cheese and toppings.
Bake for 18-20 minutes or until the crust has reached desired crispiness.
