One Pot Red Wine Spaghetti



I love the ease of cooking everything in one pot but what I love even more is adding wine. If you prefer omit the wine, substitute with crushed tomatoes.


One Pot Red Wine Spaghetti


Ingredients


1 Tablespoon olive oil

4 garlic cloves

2 cups red wine ( or 28oz can crushed tomatoes)

2 1/2 cups water or broth

12 oz spaghetti or other pasta

1 teaspoon salt

1 teaspoon pepper

1 Tablespoon butter (optional)

1/2 cup Parmesan Cheese

Parsley or Basil


Directions


Heat oil in a large pot or pan. Add garlic and sauté for 30 seconds. Add the wine and water and bring to a boil.


Add in the uncooked spaghetti, salt and pepper and stir together. Make sure the liquid covers all the pasta. Reduce heat, cover and simmer 12-15 minutes or until the pasta is cooked, stirring every 5 minutes. If the pasta seems dry and liquid has evaporated, add little more liquid and cook until the pasta is done.


Stir in the butter and cheese and garnish with parsley or basil.
