Parmesan Green Bean Fries




Fries you can eat guilt free. These crispy green bean fries are oven baked for a healthy side dish or snack.  I just eat them plain but you can serve with ranch dressing or make a dip with mayo and sriracha.


I usually use Panko bread crumbs, but since i didn’t have any, I crushed some ritz crackers and it worked out great. So if you want to make a gluten free version, just crush some gluten free crackers. For the seasoning, I used garlic salt and pepper but you can add your favorite spices.


To toss the green beans in flour, the easiest and less messy way for me is to add the green beans and flour into a produce or Ziploc bag.


Parmesan Green Bean Fries


Ingredients

1 lb fresh green beans, trimmed

1/4 cup flour

1 -2 eggs ( use 1egg first then add another as needed)

3/4 cup panko bread crumbs or crushed crackers ( or more as needed)

1/4 cup parmesan cheese

1/2 teaspoon salt

1/2 teaspoon pepper

optional: other spices such as red pepper flakes, paprika, garlic powder, etc.


Directions

Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper or aluminum foil sprayed with cooking spray.


Toss the green beans in flour to coat. In a bowl, whisk the egg with a fork. In another bowl, add bread crumbs, parmesan and seasonings and mix together


Dip the green beans in the egg, then coat with the panko mixture. Arrange on the baking sheet in a single layer and bake 10-12 or minutes or until the beans are tender and golden brown. Serve them plain or with your favorite dipping sauce or dressing.
