Stir Fry is my go-to for a quick meal when I have protein and vegetables on hand. This time. I made Pork and Bok Choy Stir Fry served with brown rice. Super simple to make but definitely not short on flavor! You can also substitute with other meat or tofu.
Pork and Bok Choy Stir Fry
Ingredients
1 lb. boneless pork loin, sliced into strips
1/4 cup soy sauce
2 Tablespoons rice wine vinegar or mirin
1 Tablespoon sesame oil
2 Tablespoons brown sugar
1 teaspoon cornstarch
pinch of pepper
1 Tablespoon oil
3 garlic cloves, minced
1 teaspoon ginger, minced
3-4 baby bok choy, sliced
Optional garnish: green onions or sesame seeds
Directions
In a bowl, add pork, soy sauce, vinegar, sesame oil, brown sugar, corn starch, and pepper. Stir together and set aside to marinate while you prep the other ingredients
Heat oil in pan. Add pork and sauté for a few minutes. Move pork to the side of the pan, add in garlic and ginger and saute for about 30 seconds. Add in bok choy and stir all ingredients together. Stir fry until boy choy is soft and pork is cooked through. Taste and adjust seasoning if needed. Top with optional garnish.
