Stir frying is my go-to for a quick meal when I have protein and vegetables on hand. This pork and bok choy stir fry served with brown rice is simple to make with lots of flavor. Feel free to substitute with any other meat or tofu for a vegetarian option.
Pork and Bok Choy Stir Fry
Ingredients
1 lb. boneless pork loin, sliced into strips
1/4 cup soy sauce
2 Tablespoons rice wine vinegar or mirin
1 Tablespoon sesame oil
2 Tablespoons brown sugar
1 teaspoon cornstarch
pinch of pepper
1 Tablespoon oil
3 garlic cloves, minced
1 teaspoon ginger, minced
3-4 bok choy, sliced
Optional garnish: green onions or sesame seeds
Directions
In a bowl, add the pork, soy sauce, vinegar, sesame oil, brown sugar, corn starch, and pepper. Stir together and set aside to marinate while you prep the remaining ingredients.
Heat oil in pan. Add the marinated pork and sauté for a few minutes. Move the pork to the side of the pan, add in garlic and ginger and sauté for about 30 seconds.
Add the bok choy and stir fry until soft and the pork is cooked through. Taste and adjust seasoning if needed and top with optional garnish before serving.
