Southwestern Chicken Wraps




Southwestern Chicken Lettuce Wraps with Avocado Cilantro Dressing has all the flavors of a traditional taco without the carbs. Serve with romaine lettuce as a light meal or Belgian endives for a healthy party appetizer. If you don't have all the seasonings, substitute with your favorite taco seasoning packet or spice.


Southwestern Chicken Wraps

Serves 4 Ingredients


1 teaspoon salt 1 teaspoon pepper 1/2 teaspoon oregano 1/2 teaspoon garlic powder 1/2 teaspoon turmeric 1/2 teaspoon cumin 1/2 teaspoon chili powder 1/2 teaspoon coriander 2 chicken breasts, sliced into thin strips or cubed (or use ground chicken) 2 Tablespoons olive oil 1-2 bell peppers, diced 1 onion, diced 3 garlic cloves, minced Lettuce leaves (romaine or iceberg) Optional garnish: tomato, red onion, green onion, avocado or cilantro


Avocado Cilantro Dressing 1 avocado, pit removed 2 Tablespoons olive oil Zest and juice of 1 lime 2 garlic cloves 1 Tablespoon cilantro 1/4 cup water ( or more as needed) Pinch of salt Directions


Dressing: Combine all the ingredients in a blender and process until smooth, adding more water as needed.

In a bowl, combine salt, pepper, oregano, garlic powder, turmeric, cumin, chili powder and coriander and mix together. Add the chicken and toss to coat with the spices.

Heat oil in a large skillet and cook the chicken until no longer pink. Add the bell peppers, onions and garlic and continue to sauté for a few minutes or until the chicken is cooked through. Spoon the filling on top of lettuce leaves and top with avocado cilantro dressing and optional garnish.
