Healthy, delicious and hearty, this one pot vegetarian dish makes a flavorful meal or side dish.
Sweet Potato Curry
Ingredients 1 Tablespoon olive oil 1 onion, diced 3 cloves of garlic 2-3 sweet potatoes, peeled and diced in cubes 1 Tablespoon curry powder 1 Tablespoon cumin 1 teaspoon salt 1 teaspoon pepper 1 (15oz) can diced tomatoes 1 (15oz) can chickpeas (garbanzo) rinsed and drained 1 cup coconut milk (or more as needed) 10 oz frozen spinach or use fresh (optional) Rice for serving ( brown, basmati or white) Garnish: Cilantro, minced
Directions
Heat oil in a skillet. Add onions, garlic and sauté for a few minutes.
Add sweet potatoes, curry powder, cumin, salt and pepper and continue to sauté for a few minutes.
Add tomatoes, chickpeas and coconut milk and bring to boil. Cover, reduce heat and cook until the sweet potatoes are soft.
Add spinach and continue to cook until wilted. Top with optional garnish before serving.
