Tomato Garlic Pasta




A quick and easy dish that comes together while your pasta is cooking as you only need tomatoes and garlic for the sauce. For a kick, add optional red chili flakes.

Tomato Garlic Pasta

Ingredients 1/2- 1 pound pasta Salt 2-3 Tablespoons extra-virgin olive oil 3-4 cloves garlic, thinly sliced 1 - 2 pints cherry / grape tomatoes Salt and Pepper Garnish: basil or parsley Grated Parmesan cheese

Directions Boil the pasta in salted water according to package directions for al dente.

Heat oil in a large skillet, Add garlic and sauté for about 30 seconds.

Add the tomatoes and cook until the tomatoes begin to soften. Gently press with the back of a wooden spoon to help the tomatoes burst as they soften. Continue to cook for about 5 minutes. Taste and add salt and pepper as needed. ( don’t add too much salt as pasta water will be added)

Once the pasta is cooked, reserve about a cup of pasta water and drain. Add to the sauce and cook about a minute adding some of the pasta water as needed for desired consistency. Optional: Stir in 1 Tablespoon of olive oil to the pasta.

Top with grated parmesan cheese and basil before serving.
