
A quick, healthy and delicious light meal. I made homemade pesto but free to use store bought.
Zucchini Noodles with Pesto
Ingredients
Zucchini
Tomatoes
Pesto:
1 cup fresh basil
½ cup nuts (walnuts, pine nuts, etc.)
Zest and juice of 1 lemon
1/4 cup grated parmesan cheese
2 garlic cloves
1 teaspoon each salt and pepper
1/4 cup olive oil
Directions:
Use a julienne peeler or spiralizer to make the zucchini into noodles. Set aside.
Pesto: In a food processor, add basil, nuts, zest and juice of lemon, parmesan cheese, garlic, salt and pepper and process until combined. Slowly add olive oil, while the food processor is running, and process until smooth.
To serve: toss the zucchini, tomatoes and pesto together.
Note: I prefer eating this dish raw but you can sauté in a skillet for a few minutes before tossing with the pesto.
