Asian Slaw- delicious on its own, as a side or topped on burgers or tacos.
-If you don’t want to cut the vegetables, buy the shredded coleslaw and carrots. -Add some red bell peppers, shelled edamame or nuts to the slaw or add nut butter to the dressing. -Double the dressing ingredients if using lots of vegetables or if you prefer more dressing. -You can also make the dressing a couple of days ahead and when you’re ready to eat, just toss with the vegetables and serve!
Asian Slaw
Dressing: 1 garlic, grated or finely minced 1 teaspoon ginger, grated or finely minced 2 Tablespoons olive oil 1 Tablespoon sesame oil 3 Tablespoons rice vinegar 1 Tablespoon soy sauce 1 Tablespoon honey, agave or sugar pinch of salt and pepper optional: 1 Tablespoon nut butter sesame seeds
Slaw: Shredded cabbage Shredded carrots cilantro, chopped green onions, sliced optional: nuts and sesame seeds
Directions:
Dressing: In a bowl, whisk all the ingredients together. Taste and adjust ingredients as needed to your taste. (If making the dressing ahead, just add to a mason jar, shake well and place in the refrigerator).
Slaw: Add shredded vegetables, green onions, cilantro and any other optional ingredients to a large bowl.
Add the dressing little at a time and toss well, adding more as needed.. Taste and add salt or pepper if needed.
