Balsamic Chicken and Brussels Sprouts



Need a new chicken dinner idea? Pick up some chicken and Brussels sprouts for this easy recipe roasted in one pan!


Ingredients

4-6 chicken thighs

1 lb Brussels sprouts, sliced in half lengthwise

1 onion, sliced

3 garlic cloves, minced

2-3 Tablespoons olive oil

salt, pepper and garlic powder

1/3 cup balsamic vinegar

1-2 Tablespoons honey ( or brown sugar)


Directions

Preheat oven to 400 degrees F. Line a baking sheet with parchment paper or aluminum foil sprayed with cooking spray.


Add the chicken, brussels sprouts, onion and garlic on the baking sheet. Drizzle with olive oil and sprinkle with salt, pepper and garlic powder. In a bowl, mix together the balsamic vinegar and honey, pour over the chicken and vegetables and toss to combine.


Roast for 40- 45 minutes or until the chicken is cooked through.
