Gluten-free, vegan, with no eggs, butter or sugar needed. The base is only 3 ingredients: bananas, oats and nut butter. I added chocolate chips but you can also add dried fruit, vanilla, cinnamon, etc.
Notes: -Use very ripe bananas for sweetness. -Mixture can be sticky so it helps to wet your hands before rolling. -Yields 8-10 cookies, depending on size. -Cookies can be frozen up to 2 months. Just thaw in the refrigerator before eating. -Pop them into the toaster for a warm cookie -Store in an air tight container.
Banana Oatmeal Cookies
Ingredients
2 RIPE bananas 1 1/2 cup old fashioned/ rolled oats 1/4 cup nut butter Optional: 1/4-1/2 cup chocolate chips
Directions
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
Mash the bananas in a bowl. Stir in oats, nut butter and any other optional ingredients.
Roll into balls and flatten using your hands. Place on the baking sheet and bake for 12-15 minutes or until golden. Cool.
