Beef chow mein is the perfect quick meal for a busy day. It is a great dish for using whatever vegetables you have leftover in the fridge. I wanted to use up cabbage and carrots in my fridge so that is what I added but feel free to substitute with your favorite vegetables.
Beef Chow Mein
Ingredients
1 package dried chow mein noodles
1 Tablespoon sesame oil
1 lb beef flank steak, sirloin etc, sliced
3 Tablespoons soy sauce
1 Tablespoon rice wine
1 Tablespoon sesame oil
1 Tablespoon brown sugar or sugar
1 Tablespoon cornstarch
2 Tablespoons vegetable or canola oil
3 garlic cloves, minced
1 inch ginger, minced or grated
1-2 cups cabbage, thinly sliced
½ cup carrots, shredded
Vegetable or canola oil
3 Tablespoons oyster sauce
Garnish: green onions
Directions
Bring salted water to boil and cook noodles according to package directions. Drain and coat with 1 Tablespoon with sesame oil to prevent noodles from sticking and set aside.
Cut beef into thin strips. In a bowl mix together soy sauce, rice wine, sesame oil, sugar, and cornstarch. Add steak and marinate while you cut and prep your ingredients.
Heat oil in a wok or large frying pan. Stir fry beef until browned. Remove from heat and set aside.
Add garlic and ginger and stir fry for a couple of minutes. Add cabbage and carrots and stir fry for a few minutes until vegetables are tender. Add cooked noodles, beef and oyster sauce and toss to combine.
Garnish with green onions.
