Beef Chow Mein





The perfect quick meal for a busy night and great for using whatever vegetables you have on hand. I had cabbage and carrots in my fridge so that is what I added, but feel free to substitute with your favorite vegetables.


Beef Chow Mein


Ingredients

1 package dried chow mein noodles

1 Tablespoon sesame oil

1 lb beef flank steak or sirloin, thinly sliced

3 Tablespoons soy sauce

1 Tablespoon rice wine

1 Tablespoon sesame oil

1 Tablespoon brown sugar or sugar

1 Tablespoon cornstarch

2 Tablespoons vegetable or canola oil

3 garlic cloves, minced

1 inch ginger, minced or grated

1-2 cups cabbage, thinly sliced

½ cup carrots, sliced or shredded

Cooking oil

3 Tablespoons oyster sauce

Garnish: green onions


Directions

In a large pot, boil the noodles according to package directions. Drain and coat with 1 Tablespoon of sesame oil to prevent the noodles from sticking and set aside.


In a bowl, mix together the soy sauce, rice wine, sesame oil, sugar, and cornstarch. Add the steak to marinate while you prep the vegetables.


Heat oil in a wok or large frying pan and stir fry the beef until browned. Remove from heat and set aside.

Add garlic and ginger and stir fry for about 30 seconds. Add cabbage and carrots and stir fry for a few minutes until the vegetables are tender. Add the cooked noodles, beef and oyster sauce and toss to combine.


Garnish with green onions before serving .
