Chicken Cacciatore





Delicious and classic Italian chicken recipe that's easy to make for the whole family and can be served over pasta or rice.


Chicken Cacciatore


Ingredients  4-6 chicken thighs salt and pepper 1/2 cup flour  1 Tablespoon olive oil  1 Tablespoon butter  1 onion, diced  3 garlic cloves, minced  1-2 bell peppers, sliced or chopped  1/2 cup wine or chicken broth  1 ( 28-ounce) can diced or crushed tomatoes  2 Tablespoons capers 1 teaspoon oregano  Garnish: parsley or basil


Directions 

Season the chicken with salt and pepper and dredge with flour on both sides.


Heat oil and butter in a large skillet. Cook the chicken on both sides for few minutes or until browned. Set aside.


Adding more oil if needed, add onions, bell peppers and garlic and sauté for a few minutes. Add wine and deglaze the bottom of the pan to remove any brown bits.


Add tomatoes and stir to combine. Add the chicken, capers and oregano and simmer for 20 - 25 minutes or until the chicken is cooked through.


If the sauce needs to be thickened, remove the chicken and boil for a few minutes until the sauce thickens. Garnish with parsley or basil before serving.
