Chicken Teriyaki Stir Fry



Another easy dinner ready in under 30 minutes. This dish is also great for lunch meal prep.


Chicken Teriyaki Stir Fry with Vegetables


Ingredients 1 Tablespoon oil  Vegetables such as: broccoli, peppers, snap peas, etc. 1 Tablespoon oil  1-pound boneless chicken breasts or thighs, sliced or cut into cubes  salt and pepper


Sauce  1/4 cup soy sauce 1 Tablespoon sesame oil  2 Tablespoons honey or brown sugar 2 Tablespoons rice wine vinegar or apple cider vinegar  3 garlic cloves, minced 1 Tablespoon cornstarch

Optional garnish: sesame seeds and/or green onions


Directions


In a bowl, combine the sauce ingredients and set aside.

Heat oil in a skillet and stir fry the vegetables for a few minutes until soft. Set aside.


Add some more oil and cook the chicken with salt and pepper until no longer pink about 5 minutes. Add the sauce and continue to cook for a few minutes. Add the vegetables and stir fry for a couple of minutes.

Garnish with optional green onions or sesame seeds and serve with rice.
