
These garlic parmesan fries healthier as they're oven baked, not fried. To get it crispy, I sprinkled some cornstarch to the potatoes before baking. I only added salt and pepper but you can add any of your favorite spices. Served with a yogurt aioli sauce, these are great for entertaining.
Parmesan Fries
Ingredients
3-4 potatoes, cut into strips ( i used yellow potatoes so I didn’t have to peel) ,
2 Tablespoons vegetable or canola oil
2 Tablespoon cornstarch (optional)
Salt or Garlic salt
Pepper
3 garlic cloves, minced
2 Tablespoons parsley, minced
Grated Parmesan cheese
Yogurt Aioli
1/2 cup plain Greek yogurt ( or mayo)
zest and juice of half a lemon
1 garlic clove, minced
salt and pepper
Directions
Preheat oven to 450 degrees F. Line a baking sheet with aluminum foil and spray with non-stick cooking spray.
In a large bowl, toss the potatoes with oil and cornstarch. Arrange the potatoes in a single layer on the baking sheet, using more than 1 sheet if needed.
Bake the potatoes for 30 -35 minutes, tossing halfway or until the potatoes are browned and crispy to taste . Add salt, pepper, garlic, parmesan cheese and parsley and toss together. Transfer to a serving platter and serve with yogurt aioli sauce.
