These garlic, parmesan fries are baked in the oven and addictive so make a double batch if you serving for a crowd.
To get it crispy on the outside, I sprinkle some cornstarch to the potatoes before baking. I added salt and pepper but you can add any of your favorite spices
Instead of ketchup, I served with yogurt aioli to make it healthier.
Parmesan Fries
Ingredients
3-4 potatoes, cut into strips ( i used yellow potatoes so I didn’t have to peel) ,
2 Tablespoons vegetable or canola oil
2 Tablespoon cornstarch (optional)
Salt or Garlic salt
Pepper
3 garlic cloves, minced
2 Tablespoons parsley, minced
Grated Parmesan cheese
Yogurt Aioli
1/2 cup plain greek yogurt ( or mayo)
zest and juice of half a lemon
1 garlic clove, minced
salt and pepper
Directions
Preheat oven to 450 degrees F. Line a baking sheet with aluminum foil and spray with non-stick cooking spray.
In a large bowl, toss the potatoes with oil and cornstarch.
Spread them in a single layer on the sheet pan. ( use 2 pans, if needed)
Bake the potatoes for 30 minutes, tossing once, until the potatoes are brown and cooked through.
Add salt, pepper, garlic, parmesan cheese and parsley to the sheet pan and toss with the fries.
Place on a serving platter
