These are great for entertaining using the instant Pot to save time. If you prefer using a crockpot, sear the meat in a separate pan. Layer some onions on the bottom of the crockpot then add the remaining ingredients as directed. Cook for 8 hours on low.
Instant Pot Pulled Pork Sliders-
Ingredients
• 3-4 pound boneless pork roast / shoulder, cut into 4 pieces • 2 Tablespoons oil • 1 cup water (or beer, coke or root beer) • ½ cup apple cider vinegar • 2 cups barbecue sauce, divided
• ½ cup of leftover cooking liquid (optional) • Hamburger or slider buns
Dry Seasoning
• 2 Tablespoon brown sugar
• 1 teaspoon garlic powder
• 1 Tablespoon paprika
• 1 Tablespoon chili powder
• 1 teaspoon salt
• 1 teaspoon pepper
• 1 teaspoon cumin
• 1/4 tsp cayenne powder (optional)
Directions
In a small bowl, combine the ingredients for the dry seasoning and rub on all sides of the pork.
Press SAUTE. Once hot, add oil and the sear the pork on all sides until browned, working in batches, if needed. Remove and set aside.
Into the pot, add water or beer and deglaze the bottom of the pan using a wooden spoon. Press CANCEL.
Stir in apple cider vinegar and 1 cup of barbeque sauce. Add pork, cover, and cook on manual high pressure for 60 minutes. Naturally release for 15 minutes.
Remove the pork and shred using 2 forks. Discard the cooking liquid, reserving about 1/2 cup in the pot. Return the pork to the pot and mix in the remaining cup of barbeque sauce.
Serve on buns with cabbage, coleslaw or your favorite toppings.
