Hearty, delicious and packed with flavor. I made this in the Instant Pot but stove top directions are also below. For spices, I added chili powder, paprika, garlic powder and cumin but feel free to add /substitute with your favorite spices.
Options:
Add in a packet of taco seasoning
Make it spicy by adding jalapeño, red pepper flakes or cayenne.
Add 2 different types of beans for variety (I used kidney and chili beans).
I added cubed pork shoulder for bigger chunks of meat.
Start with 1/2 cup of broth and add more as needed based on the amount of ingredients or desired consistency.
You can also add 1-2 bouillon cubes with water for the broth.
Make a double batch to meal prep for the week or freeze for later!
Chili
Ingredients
1 Tablespoon olive oil
1 onion, diced
1 Jalapeño seeded and minced (optional)
1 red bell pepper seeded and chopped
3-4 garlic cloves, minced
1 -2 lbs ground meat (I used pork shoulder, cubed)
2 (15 oz) cans of beans, drained ( kidney, chili, pinto, or black)
1 (15 oz) fire roasted or diced tomatoes with juice
1 (8oz) can tomato sauce
1/2 -1 cup broth or water (start with 1/2 cup and add more as needed)
2 Tablespoons tomato paste
2 Tablespoons chili powder
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon smoked paprika or paprika
2 teaspoons cumin
1 teaspoon sugar( optional)
Optional Garnish: cilantro, lime, green onions, sour cream, shredded cheese, avocado, chips etc
Directions:
Stove Top Directions:
Heat oil in a pot. Sauté the onion, jalapeño, bell pepper and garlic for a few minutes. Add in meat and cook until browned. Add in remaining ingredients and stir together. Bring to a boil, then reduce heat and simmer for 20-25 minutes, stirring occasionally. Taste and adjust seasonings, as needed.
Instant Pot Directions:
Press SAUTE mode and add oil. Sauté the onion, jalapeño, bell pepper and garlic for a few minutes. Add in meat and cook until browned. Press CANCEL. Add in the remaining ingredients and stir together. Cook on manual high pressure for 15 minutes and release pressure when done. Taste and adjust seasonings, as needed.
To serve: transfer to a serving bowl and garnish with your favorite toppings.
