
These No-Bake Energy Bites are easy to make, healthy and so delicious! You can add or substitute with any other ingredients you have on hand such as oats, dried berries, protein powder etc.
No Bake Energy Bites
Makes 12-15
Ingredients
1/2 cup unsweetened coconut flakes
1 cup nuts (walnuts, cashews, almonds, etc.)
1 cup pitted dates (if dry, soak in warm water for 10 minutes)
1/2 cup nut butter
¼ cup cacao nibs or chocolate chips (optional)
Coconut flakes or cacao powder (optional)
Directions
Pulse the coconut flakes and nuts together in a food processor. Add the dates and process until combined.
Transfer to a bowl. Add in almond butter and cacao nibs/chocolate chips and mix well. Shape into bite size balls and roll in coconut flakes or cacao powder. Store in the refrigerator or freezer until ready to eat.
