One of my favorite ways to enjoy potatoes and the perfect side dish with any meal. To prep ahead, boil the potatoes ahead of time and pan fry when ready to serve.
Pan Fried Smashed Potatoes
Ingredients
2 lbs baby potatoes 1 teaspoon salt 1 Tablespoon olive oil 3 cloves garlic, minced 1 Tablespoon butter ( or add more oil) Optional garnish: herbs and parmesan cheese
Directions
Add the potatoes and salt into a large pot. Add enough water to cover the potatoes and simmer for 12-15 minutes or until potatoes are fork tender. Drain.
Heat oil in a large skillet. Add garlic and cook for about 20 seconds. Add the butter and potatoes and str together. Smash the potatoes with a spatula, potato masher or bottom of a cup and pan fry until golden brown, flipping over halfway.
Season with salt and pepper and top with optional herbs or parmesan cheese before serving.
