Pork Stew



This hearty One Pot Pork Stew with bacon and beans is full of flavor and makes a delicious family meal.

Pork may not be the first thing that comes to mind when you think of stew as Beef is usually the meat of choice but give this a try for something different! It’s satisfying to serve on its own but you can also serve with some bread or over rice or noodles.


Here are some options:

  • Instead of pork, use beef chuck

  • Use sausage instead of bacon

  • Add potatoes or sweet potatoes instead of beans

  • Add / substitute vegetables such as turnip, parsnip or butternut squash

  • Add a couple Tablespoons of tomato paste

  • Add jalapeño for a kick

  • Make a double batch to freeze, up to 4 months


Pork Stew


Ingredients

2-3 slices of bacon, chopped

2 lbs pork shoulder, cut into chunks

salt and pepper 1 onion, diced

3 garlic cloves, minced

1 (15oz) can diced tomatoes

1 (15oz) can cannellini beans

2 carrots, cut into chunks

4 cups chicken broth

1 sprig rosemary (optional - use dried herbs) 2 zucchinis, cut into chunks ( or any other vegetables)

garnish: parsley or cilantro

Directions


In a large pot, cook the bacon until crisp and set aside. Season the pork with salt and pepper and sear on both sides until browned. Set aside.


Add onions and garlic and sauté for a few minutes. Season with salt and pepper.


Add the pork back into the pot and add the tomatoes, beans, carrots and optional herbs. Cover and bring to a boil. Reduce heat and simmer for 30-40 minutes or until the pork is tender. Add any other optional vegetables and simmer for about 10 minutes until the vegetables are tender.


Taste and add salt and pepper as needed. Top with bacon and parsley before serving.
