Seafood Linguine



This is a great recipe for entertaining as it looks elegant but easy to make in under 30 minutes. Add your favorite seafood such as clams, mussels, shrimp, scallops, etc.


Seafood Linguine

Serves 6


Ingredients

2 Tablespoons salt

1 pound linguine

1 Tablespoon olive oil

2 shallots, minced (or use 1/4 onion)

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

1 1/2 cups white wine

1 lb seafood ( clams, mussels, shrimp, etc.)

1 (28oz) can diced tomatoes with juice

1 teaspoon salt

1 teaspoon pepper

1 Tablespoon butter

Zest and juice of 1 lemon

¼ cup parsley, chopped

Salt and pepper to taste


Directions


In a large pot, cook the linguine in salted water according to package directions for “al dente”.


Meanwhile, heat olive oil in a large sauté pan. Add shallots, garlic and red pepper flakes and sauté or a few minutes. Add in wine, seafood, tomatoes, salt and pepper and simmer covered until the clams open, approximately 3-5 minutes. ( discard any that do not open).


Reserving about 1 cup of the pasta water, drain the water and add the noodles to the pan. Add butter, lemon zest and juice and toss together Add some of the reserved cooking water, if the pasta looks dry.


Add parsley and a drizzle of olive oil and toss to coat. Transfer to serving dish and garnish with additional parsley if desired.
