Sesame Chicken




Easy and delicious dinner for a busy weeknight. At restaurants this dish is usually deep fried, but this is a healthier version. Ingredients

Sauce  1/4 cup soy sauce  1 Tablespoon sesame oil  1/4 cup rice vinegar or mirin 2 Tablespoons water  2 Tablespoons honey or brown sugar ( or more as desired)  1 teaspoon grated ginger  3 garlic cloves, minced


Chicken  1 lb boneless skinless chicken breasts or thighs, cut into cubes  salt and pepper  1 egg  2 Tablespoons cornstarch 1-2 Tablespoons sesame oil or oil

Optional Garnish: sesame seeds and green onions  Rice for serving


Directions


In a bowl, combine the sauce ingredients and set aside.


Season the chicken with salt and pepper. In a bowl, whisk the egg and corn starch together and toss the chicken in the egg mixture.


Heat oil in a large skillet. Cook the chicken until browned on all sides and stir in the sauce.


Simmer on low until the sauce thickens and the chicken is cooked through. Serve over rice and garnish with optional sesame seeds and green onions.
