Sheet Pan Chicken Fajitas


Chicken and vegetables roasted in one pan to save time. Serve with tortillas or as a bowl for a simple but delicious meal.


Ingredients 2-3 chicken breasts, cut into strips 2 bell peppers, cut into strips 1 onion, thinly sliced 2 Tablespoons olive oil 1 teaspoon salt 1 teaspoon pepper 1 teaspoon garlic powder 1 teaspoon paprika 1 teaspoon cumin 1 Tablespoon chili powder 1/2 teaspoon oregano Garnish: cilantro Serving: Tortillas, rice or quinoa


Directions Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil sprayed with cooking spray or parchment paper.


Arrange the chicken, bell peppers and onions on the baking sheet and drizzle with olive oil.


In a bowl, mix together the salt, pepper, garlic powder, paprika, cumin, chili powder and oregano.


Toss the chicken and vegetables with the spices on the baking sheet and arrange in a single layer. Bake for 15-20 minutes or until the chicken is cooked through. Serve as tacos or a bowl with rice or quinoa.
