This dish is packed with flavor and perfect for when you’re short on time. Whether you’re cooking for 2 or for a crowd, this recipe can be easily adjusted as there are no measurements. Just stir fry everything in a skillet!
I topped this dish with pickled Hatch Chiles and Onions that I made. Pickled chiles are a tasty condiment to add over stir fry dishes, burgers, rice dishes and so much more.
For the Stir Fry:
Add oil into a skillet and cook shrimp for a few minutes and set aside.
Add onions and garlic and cook for a few minutes. Add chorizo and continue to cook for a few minutes.
Add in corn and tomatoes and stir fry until chorizo is cooked. Add in the cooked shrimp and stir together.
Squeeze some lime and add optional cilantro or green onions
Top with pickled hatch chiles and onions.
Pickled Hatch Chiles with Onions
Ingredients
4-5 Hatch chiles ( or substitute any other chili pepper)
1 red onion or onion peeled and sliced
optional: garlic, mustard seeds, red pepper flakes, peppercorns
1 cup water
1 cup white vinegar
2-4 Tablespoons sugar
1 tablespoon salt
Directions
Slice chiles into thin rings, removing seeds and membrane if you prefer mild.
Into a jar, add peppers, sliced onions and any other optional ingredients. In a saucepan, add water, vinegar, sugar and salt and bring to a boil.
Carefully fill the jar with the hot brine mixture. Let cool. Cover and place on the counter or refrigerator overnight. Keep refrigerated.
