Tuscan Kale Soup is one of my favorite soups and always a hit at my cooking classes as it’s so easy to make and delicious!
Tuscan Kale Soup
Ingredients
1 Tablespoon olive oil
1-pound ground Italian sausage
1 onion diced
1-2 carrots, peeled and diced
4 garlic cloves, minced
1 (14.5 oz) can white cannellini beans
1 (14.5oz) can diced tomatoes
6 cups chicken or vegetable broth
1 teaspoon salt
1 teaspoon pepper
1 teaspoon Italian seasoning
1/2 teaspoon red pepper flakes (optional)
1 bunch of kale, roughly chopped with stems removed
Optional topping: parmesan cheese
Directions
Heat oil in a large pot. Add sausage and cook until no longer pink. Add in the onions, carrots and garlic and sauté for a few minutes.
Stir in the beans, chicken broth, salt, pepper, Italian seasoning and red pepper flakes. Cover and bring to a boil. Reduce heat and simmer for 10 minutes.
Stir in the kale and continue to simmer for 10 minutes or until the kale and vegetables are tender. Taste
and adjust seasoning, as needed and top with parmesan cheese before serving.
