Potatoes

1.5 lbs baby potatoes

2 Tablespoons extra virgin olive oil

1 teaspoon salt

1/2 teaspoon pepper

Optional cheese: parmesan, mozzarella, gorgonzola, cheddar, etc

Optional toppings: parsley, green onions, chives, sour cream, bacon, cheese, etc,

Caramelized Shallots

4-5 shallots, depending on size

1 Tablespoon olive oil

1-2 Tablespoons balsamic vinegar

Directions

Preheat oven to 425 degrees F. Line a baking sheet with parchment paper or foil and set aside.

Place the potato in between two skewers or chopsticks and make even cuts into the potato without cutting through the bottom.

Place potatoes in a large bowl and toss with oil, salt and pepper.

Arrange the potatoes in a single layer on the baking sheet, cut side up. Bake for 45 -55 minutes or until potatoes are tender in the inside and crisp on the outside.

When the potatoes are done, top with optional cheese and caramelized shallots, then return to the oven for a few minutes for the cheese to melt.
